Homemade mini chicken bites, Mediterranean style, with hints of garlic and lemon, delicious served with creamy mashed potatoes and seasonal veg. The calories are probably a bit naughty, but we should indulge ourselves occasionally, don’t you think?

Ingredients:

  • 1 chicken breast
  • 2 cloves garlic
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Flour

Directions:

  1. Cut the chicken breast into bite-sized pieces.
  2. Place the chicken into a bowl, add the olive oil, the juice of two lemons and the garlic, peeled and crushed.
  3. Leave to marinade for 2 – 3 hours in the fridge.
  4. Once marinated, roll the chicken pieces in the flour, shake off the excess and fry in hot olive oil for about 15 – 20 minutes until golden brown and tender.
  5. Sprinkle with a little salt, serve with alioli (garlic mayonnaise) or tomato salsa
